Getting Back On Track- Smoothie Style

To be honest, my nails have never been stronger, my skin is looking healthier and I have a bit more pep in my step. Recently I was wondering what might be contributing to these fabulous results and I realized... it's my breakfast smoothie!


In general, breakfasts are hard for me. No gluten, dairy, sugar and eggs cause my options to be limited. (I can have some eggs in things- but eating them scrambled or fried seems to throw my system off). As I continue to heal my Crohn's disease with food, I also continue to learn what foods sit well with me and what causes me to go in tailspin.


So... when we go on trips and stay in hotels, I tend to splurge and know that I have limits, or eat oatmeal. (While buckwheat and amaranth are also options- I'm still growing to like them.) Recently, in Costa Rica, I might have indulged in a few croissants with chocolate. OMG, they were so yummy.


Over the past two weeks I've been in three countries, and stayed in two lovely hotels. And now that I am home... I am getting back on track... smoothie style.


I LOVE this smoothie. Like, I get excited to have it everyday. It fuels me, fulfills me and is easy to have when corralling twin boys for school on jet lagged mornings. AND, it's refined sugar free, dairy free (gluten free, toxic ingredient free...) and fairly low on the glycemic index.


And, like I said above, the ingredients are causing me to look and feel amazing!

Katherine's Very Berry Smoothie

1 cup of Unsweetened Vanilla Almond Milk

1/4 cup of Blueberries

1/4 cup of Raspberries

1/2 cup of Strawberries (6 or so Strawberries)
